✨Ingredients✨
1 tablespoon olive oil
1 ½ pounds (680 g) boneless skinless chicken thighs, cut into 1 inch pieces
Freshly ground salt and pepper
5 cups water or chicken broth
1 vegetable bouillon cube (don’t add if use a broth)
1 tablespoon provence seasoning or dried oregano
1 teaspoon salt, plus more to taste
Lots of freshly ground black pepper
6 garlic cloves, finely minced
1 large yellow onion, cut into chunks
3 large carrots, peeled and cut into 1/2-inch diagonal slices
1 pound (450 g) potatoes, diced into ½ inch cubes
¼ cup all purpose flour (or sub all purpose gluten free flour)
1/2 cup milk (or heavy cream or dairy free milk will work)
2/3 cup (50 g) frozen peas
👩🍳Instructions:
✅Add 1 tablespoon olive oil to a large pot and place over high heat. Add chicken pieces and generously season with salt and pepper, brown the meat about 5-6 minutes.
✅Add in garlic, onion chunks, carrots and diced potatoes, herbs, water (pour to cover all the ingredients), vegetable bouillon cube. Cover and cook on a medium high heat until veggies are cooked.
✅Meanwhile pour 1/2 cup of water to a medium bowl, then stir in ½ cup of milk and whisk in ¼ cup flour until there aren’t any lumps remaining.
✅Add mixture to the pot and stir to combine. Stir in frozen peas and cook uncovered for 15-20 more minutes until chicken soup thickens up a bit.
✅Serve immediately with toasted french bread, cornbread, crackers, or even buttermilk biscuits.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
