Naturally Colored Strawberry Marshmallow

The homemade Strawberry Marshmallow uses just a few ingredients and you can really taste the strawberry and feel how much softer they are when you compare them to the pre-made powdery ones you get from the grocery store.
Prep time: 10 minutes
Chill Time: 4 hours
Yieles: 490 g (49 pieces per 10 g)
---------------------------------- RECIPE ------------------------------------
✨Ingredients✨
15 g gelatin powder
90 g water (for gelatin)
200 g sugar
150 g agave syrup or honey
80 g water
5 g beet root powder (optional for color)
30 g strawberry jam (optional)
👩🍳Instructions:
✅In a big bowl mix gelatin powder and 90 g cool water, allow to bloom while you heat the sugar mixture.
✅In a large saucepan, combine the agave syrup, 90 g water and granulated sugar. Place over medium heat. Bring to a boil. Place the candy thermometer into the syrupy liquid -- without stirring -- until it is at 115-118 C (240°F).
✅While the mixer runs on low speed pour the hot sugar mixture into the bloomed gelatin. Gradually increase mixer speed to high. Beat until the marshmallow has a very thick consistency. You will know it's ready when it forms a thick ribbon once the whisk has been removed.
Mix in the beet root powder and strawberry jam (rub the jam through a sieve) once the desired consistency is reached.
✅Fill the brownie pan with powdered sugar (1/2 inch) and make round holes using a measurement spoon (1/2 tbsp) or small ball. Using a piping bag pour marshmallow into the holes. dust with powdered sugar and press a little the tops.
✅Transfer the marshmallow to the pan, oiled and dusted with powdered sugar. Spread the marshmallow evenly and smooth the top.
✅Allow it to sit, uncovered at room temperature for at least 4 hours.
✅Store within a dry container in a cool room
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
