I make this Vegetarian stir fry dish every Chinese New Year (“CNY”). On the first day of CNY, we have vegetarian food in the morning. We do not use any garlic or onion in this recipe. Most of the flavours come from the fermented bean curd. The main ingredients for this recipe is the fermented bean curd, nappa cabbage, shiitake mushrooms, bean curd sheets and glass noodles. You can add any other vegetables for the other ingredients. I added carrot, sweet peas, wood ear mushrooms and ginkgo for more colour and sweetness. Some other recipes add enoki mushroom, vegetarian bean curd etc.
💗 Ingredients:
3-4 cubes of fermented bean curd 3-4块腐乳
600 grams nappa cabbage 600克白菜
1 handful of wood ear mushrooms 1 把木耳
5 shiitake mushrooms 5个香菇
30-50 grams glass noodles 30-50克冬粉、粉丝
2 bean curd sheets, fuchuk 2片腐竹
1 carrot 1根胡萝卜
100-130 grams sweet peas 100-130克甜脆豆
50 grams ginkgo 50克白果
Seasoning:
1 tablespoon light soy sauce 1汤匙生抽
1 teaspoon sugar 1茶匙糖
pinch of salt to taste 少许糖
3-4 tablespoon water 3-4汤匙水
