Almond Cookies Recipe
Prep time: 20 minutes
Bake time: 10 minutes
Chill Time: 15 minutes
Serves: 9
---------------------------------- RECIPE ------------------------------------
✨Ingredients✨
For the cookies:
120g blanched almond flour (not almond meal)
2 tablespoons maple syrup
2 tablespoons virgin coconut oil, melted
Pinch of salt
For the date caramel:
170 g (8 large) medjool dates, pitted (make sure they are plump and juicy!)
¼ cup full-fat canned coconut milk
1 tsp vanilla extract
For the chocolate glaze:
Melt 100 g milk chocolate and combine with 2 tsp vegetable oil.
👩🍳Instructions
For the cookies:
✅1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
✅2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
✅3. Shape dough into 9 cookies.
✅4. Bake in a preheated 350F oven for 10-12 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
For the date caramel:
Place the pitted dates, coconut milk, salt and vanilla into a food processor and process until very smooth.
Place a small amount (1 tsp or 5 g) of the date caramel onto each cookie, spread evenly on the top of the cookie.
Pop into the fridge for about 15 minutes.
Pour melted chocolate right on top of the date caramel and place back into the fridge until hard.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
