These healthy no bake oatmeal cookies are perfect for meal prep! They are gluten free, enough to be eaten for breakfast or perfect as an afternoon snack. These no-bake cookies will be your new favorite treat!

Prep time: 20 minutes
Chill Time: 1 hours
Yieles: 490 g (49 pieces per 10 g)

---------------------------------- RECIPE ------------------------------------
✨Ingredients✨
200 grams of rolled oats
130 g pitted dates
2 tbsp coconut flour
1 pinch of salt
1/8 tsp vanilla powder
125 ml warm water
200 g dark chocolate

👩‍🍳Instructions:
✅ Add the oats in a blender and grind them into the flour. Transfer the ground oats in a mixing bowl. Add salt, coconut flour, vanilla, mix to combine. Set aside.
✅ Add the dates in a pot. Pour water over them so that they are well covered. Let them simmer on medium heat for 3-4 minutes, until softened.
✅ Then put the soft dates with 125 ml warm water in a blender and mix everything to a date paste.
✅ Add the date paste to the dry mixture and knead everything into a dough. If the dough is too stiff, you can simply add some warm water.
✅ Take 1 tablespoon of the dough (like a walnut size) and then shape it into a thick cookie.
✅ Melt the chocolate in a water bath and roll the biscuits in it. Then place them on a plate (the plate should be covered with parchment paper to prevent them from sticking). Then let the cookies rest in the fridge for 45 minutes so the chocolate hardens.

❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!
