This Prawn and Chives Egg recipes is common in Chinese home cooking. The ingredients are simple and easily available. Prawn and chives have always been a good flavour combination and commonly used in dim sum dishes. For instance, we have prawn and chives dumpling for dim sum. Prawns are optional in this recipe. I added it for extra sweetness.
This egg recipe is perfect for any mealtime, whether it's breakfast, brunch, or dinner. Not only is it easy to prepare and cook, but it's also packed with protein from the prawns and eggs and loaded with vitamins and antioxidants from the chives.
Important tips and notes:
1) Oil is hot before pouring in the egg mixture. Helps prevent the egg from sticking to the pan and fluffs up the edges of the well making it more fragrant.
2) Do not pour the batter to thick, a thin layer will do as it will take longer to cook with a thick layer and the middle area may not be thoroughly cooked.
Ingredients:
4 eggs, room temperature
30 grams chives,
150 grams small prawns, optional
season with salt and pepper
3-4 tablespoon oil for cooking

重要提示:
1)油热后倒才入蛋液。会助于防止鸡蛋粘在锅上鸡蛋更香。
2) 面糊不要倒得太厚,薄的就可以了,因为煮的时间比较长,而且中间的部分可能不会熟。
