How to make an Overnight proofing Lazy Buns.

Here's what you'll need:
3 and ½ cup bread flour or all purpose flour (437g)
1 and ½ tsp instant yeast (5g)
1/4 cup milk powder (30g)
1 tsp salt (5g)
1 cup water (250ml)
1 large egg
1/3 cup condensed milk (100g)
1/3 cup unsalted butter (75g)


1. In a mixer bowl, place bread flour, yeast, milk powder, salt, water, egg, condensed milk and butter.
2. Attach dough hook and place bowl in a stand mixer.
3. Knead on Speed 2 for 3 minutes or until dough forms a ball and clean the sides of the bowl.
4. Smooth dough and place into a bowl greased with butter or oil.
5. Cover until doubled in size.
6. Punch air out from the proofed dough and divide into 15 equal pieces, about 60 grams each.
7. Smooth and round into a ball.
8. Place in 8x10 inches or 9x9 inches baking pan lined with baking paper or parchment paper.
9. Cover with cling film/wrap not with cloth. And place in the fridge overnight or at least 8 hours.
10. The next morning, remove the cling wrap cover and place in the oven.
11. Turn on oven and set at 170°C or 340°F for at least 30 minutes or until light brown.
12. Bake right away while oven starts preheating.
13. Brush with melted butter while it's hot. Salted or unsalted will do.
14. Serve and enjoy this warm and buttery rolls.
