Snickerdoodle Cake Recipe aka Cinnamon Cake –This is a full of festive fragrant, giving me a holiday mood indeed. The cake is so soft. It goes well with this easy cinnamon frosting. This cake is also best suited for thanksgiving and Christmas. Ingredients:
• Snickerdoodle Cake
120g [1 cup] whole milk
15g [1 tbsp] white vinegar
240g [2 cup] cake flour
¾ tsp baking powder
¼ tsp baking soda
6g [3 tsp] cinnamon powder
170g [¾ cup] unsalted butter, softened
200g [1 cup] caster sugar
1 tsp vanilla extract
½ tsp salt
3 eggs (add one at a time) [OR 160g [⅔ cup] plain yogurt]
• Cinnamon Buttercream Frosting
120g [1 cup] powdered sugar
30g [2 tbsp] hot milk
226g [1 cup] unsalted butter, lightly softened
1 tsp vanilla
¼ tsp salt
1 tsp cinnamon powder
syrup
[1 tbsp sugar + 2 tbsp hot water]

Snickerdoodle cookies 8 pieces
Instructions:
• Snickerdoodle Cake
1. Preheat oven at 175°C/350°F.
2. In a jug, add milk and vinegar. Stir well and let it rest for 5 min.
3. Sift the dry ingredients: flour, baking powder, baking soda and cinnamon powder. Give it a quick stir and set aside.
4. In a large mixing bowl, add butter. Once softened, add in sugar. Mix on high speed for 2 minutes until creamy, fluffy and pale. Scrape the bowl occasionally.
5. Add in vanilla extract and salt. Mix until combined.
6. Fold in the sifted dry ingredients in few batches, alternate with the milk mixture. Fold and do not over mix.
7. Divide the batter into (3) 7-inch pans. Weighing scale is optional. Drop the pans so level the surface and release air bubbles.
8. Bake in preheated oven at 175°C/350°F for 18-20 minutes.
9. Remove the cake from the pan. Let them cool completely.
• Cinnamon Buttercream Frosting
1. Dissolve the powdered sugar with hot milk. Mix until well dissolved.
2. In a large mixing bowl, add butter (lightly softened). Add the dissolved sugar in 2 batches.
3. Mix the butter on high speed until creamy and pale.
4. Add in the remaining sugar, vanilla extract, salt and cinnamon powder. Mix until well combined.
