Eggless Brownie Cake – Another super moist brownie chocolate cake. You can basically use this recipe for a regular cake. But I made it a 3 layered cake with chocolate cream frosting. It tastes really good especially with the chocolate walnut ganache fillings. Super easy and you can make it for any occasions. I hope you’re inspired and give this cake a try. Enjoy!

Ingredients:
(3) 6 inch or 15cm pans
Eggless Brownie Cake
• 180g [1 cup] dark chocolate
• 60g [¼ cup] unsalted butter
• 150g [¾ cup] caster sugar
• 120g [½ cup] plain yogurt
• 1 tsp vanilla extract
• 120g [1 cup] all-purpose flour
• 25g [¼ cup] cocoa powder
• ¼ tsp baking powder
• ¼ tsp baking soda
• ¼ tsp salt
Chocolate Walnut Ganache
• 50g [½ cup] roasted walnuts, chopped60g
• 100g [½ cup] dark chocolate
• 60g [¼ cup] whipping cream
Chocolate Cream Frosting
• 300g [1¼ cup] whipping cream
• 30g [¼ cup] powdered sugar
• 15g [2 tbsp] cocoa powder
syrup
[1 tbsp sugar + 2 tbsp hot water]
Instructions:
Eggless Brownie Cake
1. In a bowl, add chocolate and butter.
2. Place it over a double boiler.
3. Mix untl the chocolate and butter are completely melted. Set aside.
4. While the chocolate mixture is still warm, add in sugar, yogurt and vanilla. Mix until well combined.
5. Sift in the flour, cocoa powder, baking powder, baking soda and salt. Mix just until combined, do not over mix.
6. Divide the batter evenly into 3 6-inch pans. Drop the pans on the surface to even the surface and release air bubbles.
7. Bake in preheated oven at 175°C/347°F for 20-23 minutes.
8. Remove the cakes from the pans and let them cool on the cooling rack.
Chocolate Walnut Ganache
1. Chop the roasted walnuts and set aside.
2. In a jug, add chocolate and whipping cream.
3. Microwave for 1 minutes to melt the chocolate. Mix until well combined.
4. Add in the chopped walnuts. Mix until they are evenly coated. Set aside.
Chocolate Cream Frosting
1. In a large chilled bowl, add in the whipping cream.
2. Sift in the powdered sugar and cocoa powder.
3. With an electric mixer, mix on medium speed until combined and stiff peaks formed.
