Assorted Butter Cookies Recipe – Are you thinking what I’m thinking? Thanksgiving and Christmas is coming soon. I’m sure some of you are stocking up multiple ingredients for baking. Here is another easy and fool proof cookie recipe for you using roll method. Easy roll up dough, no melting in oven. As for the cookie mould cutter, you can basically use any shapes any designs you can find. For eggless, simple just replace the egg with 60g or ¼ cup yogurt or heavy cream (dairy or non-dairy). I hope you’ll enjoy making these cute little cookies for your family and friends. Ingredients:

55g [1 medium] egg, beaten ****refer below for egg replacement
170g [¾ cup] unsalted butter, softened
1 tsp vanilla extract
½ tsp salt

After the above ingredients are well combined, creamy, fluffy and pale, transfer one third into another mixing bowl. Two third will remain in the same mixing bowl.

• Regular Dough (two third of the above)
250g [2 cups] all-purpose flour
2g [½ tsp] baking powder


• Regular Dough (one third of the above)
125g [1 cup] all-purpose flour
1g [¼ tsp] baking powder
5g [2 tsp] cocoa powder


Decorations:
• Bowl no. 1
80g [½ cup] semi-sweet chocolate, melted
35g [¼ cup] roasted hazelnut nibs

• Bowl no. 2
80g [½ cup] semi-sweet chocolate, melted

• Bowl no. 3
80g [½ cup] white chocolate, melted

Pistachio nibs
Dried rose petals




Instructions:
1. In a large mxing bowl, add softened butter and powdered sugar. Mix them on high speed for 1 minute until creamy, fluffy and pale. Scrape the bowl occasionally.
2. Then add vanilla extract and salt, continue mixing until well combined.
3. Transfer out one third of the batter into another bowl. Using a weighing scale is recommended. Two third of batter will remain in the bowl.
4. For the two third of batter, sift in the all-purpose flour and baking powder. Fold until it comes together as a dough. Roll-out the dough and use your desired cookie cutter to mould the cookies.
5. For the other one third batter, sift in the all-purpose flour, baking powder and cocoa powder. Fold until it comes together as a dough. Roll-out the dough and use your desired cookie cutter to mould the cookies.
6. Bake all the cookies in preheated oven at 175°C/348°F for 18-20 minutes. The baking time varies from oven to oven and also the thickness of your cookies.
