Ingredients:
3 eggs
Green onions
Small bunch of spinach
1/2 teaspoon dry basil
1/4 teaspoon salt
1/2 teaspoon dry oregano
Half of a cabbage
Black pepper
Oil, for greasing
Hard cheese (such as Gruyere or Parmesan)
Cherry tomatoes
Sauce

Instructions:
In a bowl, beat the eggs and season with black pepper, dry basil, salt, and dry oregano.
Add the finely chopped cabbage to the eggs and mix well.
Stir in the chopped spinach and green onions.
Heat a frying pan over low heat and grease it with oil.
Pour the egg and vegetable mixture into the pan, spreading it evenly.
Cover the pan with a lid and cook the omelette for about 5 minutes on one side.
Carefully flip the omelette using the lid.
Brush the cooked omelette with tomato sauce.
Sprinkle grated hard cheese over the omelette and add halved cherry tomatoes.
Cover the pan with a lid and cook for an additional 5 minutes or until the cheese is melted and the tomatoes are slightly softened.
Serve hot and enjoy your delicious and quick dinner!
