Ingredients for Cabbage Omelette:
1/2 teaspoon Provençal herbs
1/2 onion
Green onions
300 grams (10.5 ounces) cabbage
2 eggs
Black pepper and salt to taste
Olive oil
Soft mozzarella cheese
Tomato sauce
Instructions:
Finely chop the cabbage and onion.
In a bowl, beat the eggs and season with black pepper, salt, and Provençal herbs. Stir in the chopped cabbage and onion.
Heat a frying pan over medium heat and add a little olive oil.
Pour the cabbage and egg mixture into the pan and spread it evenly. Cover and cook for 5 minutes.
After 5 minutes, flip the omelette using a plate or lid.
Brush the cooked side of the omelette with tomato sauce and sprinkle with soft mozzarella cheese.
Cover the pan again and cook for another 4 minutes or until the cheese melts and the omelette is cooked through.
Once done, sprinkle the omelette with finely chopped green onions.
