Easy And Simple Dried Fruit Cake Recipe '

This dried fruit cake is perfect - tasty, quick and easy. For added flavor, you can add bittersweet chocolate. 😋 So let’s get baking!

You'll need

3 eggs
1 cup sugar
1 cup milk (200 ml)
1 cup vegetable oil (200 ml)
Zest of 1 lemon
1 tbsp lemon juice
1 tbsp shredded coconut
2 tsp vanilla sugar
2 tsp baking powder
1 cup dried fruits (dried apricots, dried figs, dates, dried plums, raisins)
2 tsbp crushed walnuts
2 1/2 cups all-purpose flour

1 cup = 200 ml

Here's how

Start by chopping the dried fruits you'll be using for the cake.
Sprinkle a bit of flour over the chopped dried fruits and mix them with your hands. This will help the fruits adhere better to the batter and prevent them from sinking to the bottom.
In a mixing bowl, beat the eggs and sugar until they become pale and creamy.
Once they reach a creamy consistency, add in the milk, vegetable oil, lemon juice, flour, shredded coconut, baking powder, and vanilla sugar. Mix the ingredients until well combined.
After grating the lemon zest into the batter, fold in the chopped and floured dried fruits along with the chopped walnuts.
Stir the mixture with a spatula until the fruits are evenly distributed.
Grease a cake mold with butter.
Pour the prepared cake batter into the mold.
Bake the cake in a preheated oven at 160 degrees Celsius (320 degrees Fahrenheit) without a fan for approximately 1 hour.
To check if it's done, insert a toothpick into the cake; if it comes out clean, the cake is ready.
Once out of the oven, allow the cake to cool to room temperature inside the mold.
Then, cover it with a plate, invert it, and remove it from the mold.
Slice and serve the cake. Enjoy!
