This is a Compilation of 3 Beautiful Cakes I have made. Two of them I prepared last year in March / April 2023 and the Dobos Cake I tried out in the past few weeks. They are all very delicious.
So the Vanilla Cake I chose is called Napoleon. It is made up of many homemade puff pastry sheets and filled with creamy smooth Vanilla Pastry Cream. Then I chose to decorate it with Strawberries, Chocolate and more crushed pastry. It tasted phenomenal.
The Second Cake is called Lemon Cream Cake. It might be my favourite cake I've tried that has layers and lemon. It is made up of 4 sponge cake layers. Add syrup and stack the cake with lemon curd whipped cream frosting. It's Very refreshing and an excellent dessert to serve after a meal.
Lastly, the Chocolate Cake is called Dobos. It's a Hungarian Cake, again, with many sheets but it's made very differently to Napoleon. Then it has a Chocolate and Rum cream filling. Caramel is poured on top of one of the sheets that was used for decoration.
These are cakes perfect for Special Occasions or birthdays. I have a video for Dobos Cake and in the future I hope I'll have a video for the other two. Thanks for reading, the details are below:
Napoleon Cake Recipe:
for homemade puff pastry sheets:
- 500g flour
- 250g pack butter (frozen overnight)
- 1 egg (from fridge)
- 90ml milk
- 90ml water
- 1 tbsp white vinegar
(*everything should be cold)
for vanilla cream:
- 1 Litre milk
- 180g butter
- 3 eggs
- 200g sugar
- 75g cornflour
- Vanilla extract / essence
for decoration:
- strawberries and melted chocolate
METHOD:
Grate frozen butter into the flour. Mix egg, milk, water and vinegar with a fork in a jug, add to flour mixture. Knead lightly as not to warm the dough. Divide into 12 equal balls. Use a scale if needed. Mine was 942g total and 78.5g each. Place on plate, cover and leave in fridge 2 hours.
Meanwhile, make custard cream: Place Milk in a pot and leave till hot. Whisk eggs, sugar and cornflour in a bowl. Add some of the hot milk in the eggs. Then turn entire mixture back to the pot and whisk constantly over medium low heat till thickened. Add vanilla, then butter (in 3 additions so it doesn't curdle). Cover and cool completely.
Roll each ball of dough to 23cm diameter. Prick with a fork, bake in preheated oven at 190°C for 7-8minutes. Continue rolling and baking. With scraps of dough, bake them too and then crush and you can use for garnish at the end.
Assemble when both layers and cream are cold. Add 2 - 3 tablespoons of the cream to each sheet. Stack the cake, leaving top layer with no cream. Cover in foil and leave in fridge 6 hours or overnight.
Add more cream to sides of cake and top. Stick crumbs on the sides and a crown on top. Decorate as wished, with strawberries, Chocolate. Enjoy.
Lemon Cream Cake:
for sponge cake:
- 6 eggs
- 175g sugar
- 175g plain flour
for syrup:
- 100ml water
- 75g sugar
- zest and juice 2 lemons
for lemon whipped cream:
- 270ml double cream

- 450g ricotta cheese
- sugar to taste
Garnish:
- toasted flaked almonds
- whipped cream
- Lemons
METHOD:
Sponge Cake first: Beat eggs till thick and pale adding sugar gradually, 7-8 minutes. Sift in the flour in thirds, folding gently. Divide batter in two 20cm round cake tins, lined with paper but un- greased. Bake in preheated oven at 180°C for 20-25minutes. Cool in the tin then turn to wire rack to finish cooling.
Simmer the syrup ingredients together till the sugar is dissolved - water, sugar, zest and lemon juice.
Make lemon filling: Whip cream to stiff peaks, stir in the lemon curd. Add ricotta and beat / fold through. Try and avoid making it runny. Leave in fridge 30 min. Cut each sponge in two making four layers total. Assemble: 1st sponge cake layer. Syrup. Cream. Repeat. Cover cake in more cream and stick the toasted almonds to decorate. Leave in fridge overnight. If cutting earlier the cream will leak but it will still be delicious.
