About the cake:
This delicious Hungarian Cake recipe was found in one of my mother's old cookbooks so it's very special. It is filled with marmalade and walnuts, flavoured with vanilla sugar too. I personally think it's a bit sweet so you can surely reduce the sugar amount or use the most sour marmalade you can find. I hope you enjoy this recipe and even give it a try. Hungarian Gerbeaud / Zserbo Cake:
INGREDIENTS: ( for 1 23 x 33 cm rectangular tray or bigger)
- 500g plain flour
- 200g butter
- 2 eggs
- 250ml sour cream
- 80g sugar
- 14g dry instant yeast
- zest of 1 lemon and 1 orange

for filling:
- 400g jar marmalade
- 260g ground walnuts
- 120g icing sugar
- 1 pack (30g) vanilla sugar

for chocolate glaze:
- 80 to 90g sugar
- 30g cocoa powder
- 50ml water
- 30g butter
METHOD:
In a bowl, mix yeast and sugar. Add the softened butter, and eggs, one at a time. Add the sour cream, lemon and orange zest, then finally the flour. Mix without kneading too much, and leave the dough for 20 minutes at room temperature.
Next, divide the dough into 4 equal pieces. Roll in rectangular shape, then press into a 23x33cm tray or bigger, lined with paper. Spread 1/3 of the marmalade, then drizzle the nuts mixed with both sugars (only 1/3 of it). Now repeat, rolling the dough, placing on top and continuing spreading the marmalade and drizzling the nut mixture. Remember to leave the last layer without filling (so un-brushed).
Leave the tray of cake to proof for 30 minutes, preferably covered. After that, bake in preheated oven at 170°C for 40 - 50 minutes. Cool completely.
Make glaze: Melt all the glaze Ingredients together till the butter melts and the sugar dissolves. Cool a bit, then pour on top of the cake. Leave to set at room temperature for 1 hour then another hour in the fridge. Remove from the tin, slice and enjoy!
