Lemon Muffins are a little mid winter treat from me to you. They’re my way of saying hang in there, there’s light at the end of the tunnel, and in the meantime, there are plenty of juicy ripe lemons just waiting to be baked up into these muffins.
These basic lemon muffins can be made as-is, or you can add one of several different ingredients for a variety of muffins. All options are delicious!

---Ingredients---
- 3 Eggs
- A pinch of salt
- 150g Sugar
- 2 Tbsp lemon zest
- 50g Lemon juice
- 100g Heavy cream (or yogurt)
- Add 200g All-purpose flour
- 5g Baking powder
- 100g oil

For Lemon syrup:
- 25g Sugar
- 25g Water
- 25g Lemon juice

---Instructions---
1. Whisk 3 Eggs with Pinch of salt, 150g Sugar, 2 Tbsp lemon zest and mix
2. Add 50g Lemon juice and mix
3. Add 100g Heavy cream (or yogurt)
4. Mix well
5. Add 200g All-purpose flour + 5g Baking powder and mix
6. Add 100g oil
7. Mix well
8. Fill muffins cups nice and full with the batter
9. Bake in a preheated oven at 180°C / 356°F for 25 minutes (mine took 25 minutes) until risen and a toothpick inserted in the center comes out without wet batter on it. Muffins are small and cook fast, so keep alert

For syrup
boil the 25g of sugar + 25g of water and add 25g of lemon juice off the heat.
1. As soon as the muffins are cooked (they should spring back when lightly pressed) take out of the oven and spoon the lemon drizzle topping all over the tops. Leave the muffins to sit in the tin for approximately 3 minutes before taking out and leaving to cool on a wire rack
