Ingredients
Instant Idli :
Raw rice - 1 & 1/2 cup
Leftover rice - 1/4 cup
Grated coconut - 1/4 cup
Baking powder - 1/4 tsp
Cooking soda - 1/4 tsp
Salt to taste
Ghee
Spicy tomato chutney :
Oil - 2 tsp + 3 tsp
Dry red chilli - 10
Garlic - 12 cloves
Masoor dal - 1/4 cup
Small onion / Shallots - 1/2 cup
Tomato - 1/2 kg
Salt to taste
Mustard seeds - 1 tsp
Curry leaves
Cooking method (step by step)
1. Take 1 & 1/2 cup of raw rice, wash it once and soak the rice for 1 hour before use.
2. After one hour, drain the water and transfer rice to blender jar along with that, add 1/4 cup of leftover rice, 1/4 cup of grated coconut (for extra taste and flavor), little bit of water and grind until smooth batter.
3. once the batter is ready, transfer it to a mixing bowl and add 1/4 tsp of baking powder, 1/4 tsp of cooking soda, salt to taste, little water and mix everything well. let the idli batter rest for about 30 minutes in room temperature.
While the batter is resting, lets prepare our famous THAKKALI CHUTNEY / Tomato Chutney.
4. Add about 2 tsp of vegetable oil to a pan and let it heat, once the oil is nice and hot add about 10 dry red chillies (you can add more chillies if you like it more spicy) and fry for about 1 minute in low heat.
5. once you feel the aroma of red chilli, add 12 cloves of garlic, 1/4 cup of masoor dal, 1/2 cup of shallots and fry for 2 to 3 minutes in medium flame.
6. After 3 minutes shallots will turn translucent, then add 1/2 kg tomato and mix everything well, cook the tomatoes along with shallot and chillies for 5 minutes in medium heat.
7. once the tomatoes become soft and mushy, turn off the heat and let it cool down to room temperature.
8. once its completely cooled down transfer it to blender jar and add salt according to your taste along with 1/4 cup of water and grind until smooth paste.
9. Add prepared chutney to a bowl and add water according to your preference.
10. For tadka, add about 3 tsp of oil to tadka pan, once the oil is hot add 1 tsp of mustard seeds and let it pop. Now add 1/4 cup of curry leaves and let it splatter.
11. Pour the prepared tadka over the our tasty tomato chutney, Delicious red chutney will be ready!!!!!
Now lets check the idli batter
12. After 30 minutes idli batter is now ready, mix it once and pour the batter in idli mould.
13. Now cover the idli cooker and cook the idli for about 10 to 12 minutes.
14. open the lid and check whether idli is cooked, if not cook for few more minutes. Soft and tasty instant idli is now ready!!!
Serve idli while its still hot with our spicy tomato chutney and enjoy your wonderful day...
