4 Calabaza squash
½ med onion chopped
1 Jalapeno diced
28 oz can of diced tomatoes or 4 Roma tomatoes
2 cans of corn
2-3 garlic cloves
2 tsp of chicken bouillon
2 tsp of oregano
2-3 cups of water
Queso fresco or Monterey jack cheese for topping
