I‘ve never eaten such delicious eggplant! Better than chicken nuggets. So crispy

Ingredients and recipe:
Add 60g all purpose flour to a bowl
40g potato starch
4g baking powder
Add 1g baking soda
2g salt
Mix all the ingredients together
Pour 90-100ml of cold water in the bowl
15ml vegetable oil
Mix well
Set aside for 10 minutes
Slice 1 eggplant
Pour vegetable oil into a pot
The temperature of the oil is 340°F/170°C
Dip an eggplant slices in the flour mixture
Place into the pot
Repeat with the others
Fry the others
Done!
