Hello Foodies!
It's been awhile! I'm slowly coming back on since my work schedule is pretty packed this Fall. It's starting to slow a bit so I wanted to share with you all my Mom's beautiful chayote plant this season. It has been a good season for our chayote plant. There's so much chayote growing we didn't want to pick any of them since they look so pretty. However, today I'll be showing you all how we like to eat it. Using both the chayote and the chayote vine/shoots. We're going to stir fry it with chicken. Pretty simple and very clean in flavor. So if you want something a little lighter, this dish is for you. Chayote belongs in the gourd family. It is fairly sweet and neutral in flavor. Great for soups, saute, stir fry, steaming, stews, etc. I love mine steamed. So hopefully you all enjoy this simple stir fry dish and let me know how you like to cook up your chayote :) Happy cooking!

INGREDIENTS:
2 tbsp oil
3 garlic cloves (minced)
1 lemongrass (smashed)
1-2 chicken breast (minced or ground)
2 chayotes (shredded)
Chayote vines/shoots (1 handful)
½ tsp salt to the chicken
½ tsp salt to season the whole dish (add more later if needed)
1 tsp mushroom seasoning
3-4 chili pepper sliced (add more or less)
Serve with rice
