To be honest, the Indian way of cleaning and cutting sardines is quite different from the western way. Take a look at any Malayalee cleaning Sardines, or mathi meen cleaning as they call it and you'll know what I mean. Today, we will show you how to clean and cut sardines Indian style.

The first step is to remove the head and guts of the fish. You can do this by making a small incision at the base of the fish head and then scooping out the guts.

Next, you will need to remove the scales from the fish. The easiest way to do this is to use a knife to scrape off the scales in the opposite direction of how they grow.
