강력분 300g
중력분 100g
물 175g
계란 20g
소금 9g
이스트 7g
설탕 55g
버터 50g

충전용 버터 200g

처음부터 잘하는 사람 절대 없습니다
저도 수십 번 연습하고 연습해서 완성했어요
도중에 포기할 뻔했음
도중에 성격 파탄자 될 뻔도....ㅎㅎ
여전히 100% 만족은 쉽지 않지만
행복한 베이킹을 공유할 수 있음에 감사해요

1.크루아상은 실내 온도가 높지 않은 것이 중요해요
여름은 꼭 피해주고 실내 온도 24℃가 넘지 않는게 좋아요
2.반죽에 글루텐이 많이 생기면 빵이 납작해져요
너무 오~래 반죽하지 마세요
3.충전용 버터는 너무 단단하지 않게!
버터가 끊기고 층이 제대로 만들어 지지 않습니다
4.충전용 버터는 반죽보다 부드럽지 않게!
버터가 녹아 나옵니다, 버터는 드라이 버터를 사용해 주세요
5.접기를 많이 하면 할수록 결이 촘촘해져요
영상 처럼 적당히 접어야 선명한 결이 완성!
6.밀고 접는 과정에서 버터가 녹으면 결이 생기지 않아요
녹을 것 같으면 중단하고 바로 냉장고에!
적절한 대처가 참 중요합니다
