Serves 4-5
Recipe in English:
Ingredients:
-Sabut dhania (Coriander seeds) 1 & ½ tbs
-Zeera (Cumin seeds) ½ tbs
-Sabut kali mirch (Black peppercorns) 1 tsp
-Sabut lal mirch (Button red chillies) 5-6
-Mongphali (Peanuts) 1 tbs
-Til (Sesame seeds) 1 tsp
-Khopra (Desiccated coconut) 2 tbs
-Hari mirch (Green chillies) 4-5
-Lehsan (Garlic) cloves 6-7
-Adrak (Ginger) ½ inch piece
-Cooking oil 3 tbs
-Bhindi (Okra) 500g cut in half
-Himalayan pink salt ¼ tsp or to taste
-Haldi powder (Turmeric powder) 1 pinch
-Cooking oil 3 tbs
-Aalo (Potatoes) sliced 4 medium (350g)
-Himalayan pink salt ¼ tsp or to taste
-Haldi powder (Turmeric powder) 1 pinch
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a frying pan,add coriander seeds,cumin seeds,black peppercorns,button red chillies,peanuts,sesame seeds,desiccated coconut,mix well & dry roast on low flame for 2-3 minutes.
-Let it cool.
-In mortal & pestle,add roasted spices,green chilies,garlic,ginger,crush coarsely & set aside.
-In a wok,add cooking oil,okra & mix well.
-Add pink salt,turmeric powder & fry on medium flame for 6-8 minutes & set aside.
-In the same wok,add cooking oil,potatoes & mix well.
-Add pink salt,turmeric powder & fry on medium flame for 6-8 minutes & set aside.
-In the same wok,add crushed masala,mix well & cook on medium flame for 2-3 minutes.
-Add fried okra & potatoes,mix well & cook for a minute.
-Add lemon juice & mix well,cover & cook on low flame for 2-3 minutes.
-Sprinkle fresh coriander & serve with butter paratha!

-Frying pan mein sabur dhania,zeera,sabut kali mirch,sabut lal mirch,mongphali,til aur khopra dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya dry roast ker lein.
-Thanda ker lein.
-Mortal & pestle mein roasted spices,hari mirchein,lehsan aur adrak dal dein aur coarsely crush ker ka side per rakh dein.
-Karahi mein cooking oil aur bhindi dal ker ache tarhan mix karein.
-Pink salt aur haldi powder dal ker ache tarhan mix karein aur darmiyani ancch per 6-8 minutes kliya fry ker lein & side per rakh dein.
-Us he karahi mein cooking oil aura loo dal ker ache tarhan mix karein.
