Elote Pasta Salad | Mexican Street Corn Pasta Salad Recipe

If you love all the flavors of Mexican street corn then you are going to love this elote pasta salad. It’s easy and delicious and comes together in no time at all.

👩🏻‍🍳 ELOTE PASTA SALAD

Dressing:
1 cup sour cream
1 cup mayonnaise
2 limes
1 ½ teaspoon chili powder
½ teaspoon cumin
½ teaspoon salt

Salad:
1 tablespoon olive oil
12 oz. frozen corn, thawed
12 oz. medium pasta shells, cooked
1 cup Cotija cheese, crumbled
1 bunch scallions, only white and slightly green parts
1 cup chopped cilantro
