Today is soup day I’m making up some Caldo de Albóndigas a Mexican meatball soup the soup is filled with delicious vegetables and tiny meatballs all simmered in a delicious broth I hope you all give it a try and enjoy much as we do❤️

Delicious Mexican Rice | How To Make

What you will be needing

Meatballs
1 pound ground beef 80/20
1 beaten egg
1/2 cup cooked rice measured already cooked ….do not pack cup
2 medium cloves of garlic finely minced
3 tablespoons chopped cilantro
1 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon black pepper

Soup
2 tablespoons cooking oil
1/2 of a medium diced onion
1 celery rib cut across rib into 1/2 inch pieces
4 medium cloves garlic minced well
2 cups potatoes cubed
1 cup frozen carrots
6 cups water plus 1 tablespoon knorr chicken bouillion or 6 cups of chicken broth of your choice
1/2 teaspoon cumin
15oz can crushed tomatoes
3/4 teaspoon dried oregano
1 zucchini squash
1 yellow squash
2 tablespoons cilantro chopped
Salt pepper to your liking

Garnish with chunks of avocado and lime juice when serving in bowls
