Crispelle calabresi fritte e farcite con un ripieno golosissimo a base di 'nduja, un salume piccante tipico di Reggio Calabria, ricotta , meglio se prodotta da un ottimo caseificio e non una ricotta da supermercato perché risulta più saporita e più corposa, e acciughe. Naturalmente non mancano mai anche le crispelle vuote da mangiare così o da farcire al momento con salumi e formaggi.
Un bellissimo antipasto natalizio che non può assolutamente mancare sulle nostre tavole tradizionali italiane in un giorno così speciale.
Queste crispelle sono davvero soffici e sono fatte senza patate.

Ricetta :
1 kg farina
700 g acqua
20 g lievito di birra fresco
oppure 7 g di lievito disidratato
1 cucchiaino di zucchero
20 g sale
olio per friggere : noi usiamo metà olio extravergine d'oliva e metà olio di mais
180 g acciughe
50 g salame
100 g nduja
200 g ricotta



Italian Christmas fritters for Christmas Eve.
Traditional Calabrian crispelle , a kind of savoury fritters or donuts or pancakes ( in English there is not a specific word to translate it) stuffed with a delicious filling based on 'nduja, a spicy salami typical of Reggio Calabria, ricotta cheese, better if produced by an excellent dairy and not a supermarket ricotta because it is tastier and fuller, and anchovies. Naturally, there is never a shortage of empty crispelle to eat as is or to fill at the moment with cured meats and cheeses.
A beautiful Christmas appetizer that absolutely cannot be missing from our traditional Italian tables on such a special day.
These crispelle are really soft and are made without potatoes.


Recipe :
1 kg flour
700 g water
20 g fresh brewer's yeast
or 7 g of dehydrated yeast
1 teaspoon of sugar
20 g salt
frying oil: we use half extra virgin olive oil and half corn oil
180 g anchovies
50 g salami
100 g nduja
200 g ricotta
