INGREDIENTS
125g (1/2 cup) of butter
125g (1/2 cup) of sugar
125g (1 cup) of all-purpose flour
3 eggs
1 tsp of vanilla extract
1/2 tsp of baking powder
A pinch of salt
 
250g (1 1/2 cups) of powdered sugar (150g + 100g)
1 tsp of vanilla extract
150g (2/3 cup) of butter
1 tsp of milk
 
Colored sprinkles
 
METHOD
1. In a large bowl, add the softened butter, sugar, and vanilla extract. Mix with an electric mixer until you get a smooth cream.
2. Add the eggs and mix again until fully incorporated.
3. Add the flour, baking powder, and salt, and mix again until the batter is smooth.
4. Line the cupcake molds with paper liners and fill each one with a spoonful of the batter.
5. Bake at 180°C (350°F) for about 20 minutes.
6. For the buttercream, place the softened butter, vanilla extract, milk, and 150g of powdered sugar into a large bowl.
7. Mix with an electric mixer until you get a smooth cream. Gradually add the remaining powdered sugar.
8. Transfer the buttercream into a piping bag fitted with a star tip.
9. Decorate each cupcake with the buttercream, and finally, add a handful of colored sprinkles.
