4.3 lbs boneless leg of lamb

Marinade:
2 sweet yellow onions, diced and pureed in a food processor ( makes about 3/4 cup onion juice)
1/2 cup olive oil
3 tbsp fresh lemon juice
6 large garlic cloves, finely minced
3 tsp ground coriander
3 tbs ground cumin
2 tsp sweet paprika
2 tsp sumac powder
2 tsp dry oregano ( I used Mexican oregano)
2-1/2 tsp sea salt
1 tsp ground black pepper

Cucumber and tomato salad:
1 large English cucumber
3 medium sized tomatoes
2/3 cup diced sweet or red onion
1 garlic clove, minced
1/2 cup chopped fresh mint
3 tbsp chopped fresh parsley
Juice of one lemon
Olive oil
Salt and pepper to taste
