INGREDIENTS

400g of salmon fillet

60g of parmesan cheese

80g of bread

1 egg

1 tbsp of chopped parsley

500ml (2 cups) of milk

65g of breadcrumbs

Extra virgin olive oil

Salt to taste

METHOD

1. Soak the torn pieces of bread in the milk.

2. Cook the salmon in a non-stick pan for 10-15 minutes, until it’s fully cooked.

3. Squeeze the soaked bread to remove excess milk and place it in a bowl. Flake the cooked salmon and add it to the bowl with the soaked bread.

4. Add a pinch of salt, the whole egg, and the chopped parsley. Mix everything well.

5. Shape the mixture into meatballs using your hands and roll them in breadcrumbs.

6. Heat 2-3 tablespoons of extra virgin olive oil in a pan. Once hot, add the salmon meatballs and cook them on both sides for about 10-15 minutes.
