INGREDIENTS
2 eggs
110g (1/2 cup) of sugar
60ml (1/4 cup) of vegetable oil
160g (1 1/4 cups) of all-purpose flour
8g (3/4 tbsp) of baking powder
Cinnamon
 
2 apples
1 lemon (juice)
Powdered sugar


METHOD
1. In a bowl add the eggs and sugar and mix with the electric mixer until frothy. Add the vegetable oil, flour, baking powder, and cinnamon and mix to obtain no lumps mixture.
2. Peel and slice the apples into small pieces and transfer them to the bowl. Add the lemon (juice), mix them, and set aside.
3. Place the paper cups in the muffin pan, scoop the mixture, and pour into the cups.
4. Place the apple slices on the muffins and transfer them to the oven. Bake at 180°C/360°F for 20 minutes.
5. Serve apple muffins on the serving dish and decorate with powdered sugar.
