INGREDIENTS
For the filling:
Extra virgin olive oil
1 onion
550g of spinach
2 eggs
220g of feta
Parsley
Salt
Pepper

Extra virgin olive oil
1 roll of phyllo dough
Sesame seeds
 
METHOD
1. In a pan add the olive oil, onion, and spinach and cook for a few minutes until spinach becomes soft. Remove from the heat and let it cool.
2. Transfer the cooked spinach to the bowl and add the eggs, feta, parsley, salt and pepper. Mix to combine.
3. Place the parchment paper on a baking pan and brush the bottom with olive oil.
4. Then place a sheet of phyllo pastry on the bottom and brush again with oil. Add another layer of phyllo pastry and brush with oil. Then proceed in the same way to compose another 2 layers, for a total of 4.
5. Add the filling and level it up well. Cover with another 2 sheets of phyllo pastry and brush each with oil before placing the next one. Finally, fold the corners of the phyllo pastry and cover it with one sheet. Seal well on all sides.
6. Brush the top part with the olive oil and cut it into triangles. Sprinkle with sesame seeds and bake in the oven at 180°C/360°F for 35 minutes.
7. Cut the spanakopita after baking and serve.
